UCLA Dining’s Culinary Training Program

Participants in the culinary program create unique dishes for their final assignment.
The Culinary Training Program is a five-month, in-house training program designed by UCLA Dining Services at UCLA Housing and Hospitality Services (H&HS) to introduce food service workers to basic culinary skills. The free course covers everything from knife skills to culinary history, flavor profiles, plating and more. Its aim: to build a foundation for team members to reach for the next step in their professional journey while ensuring that this award-winning team stays ahead of the game.

The second cohort of this ground-breaking Culinary Training Program is on track for graduation. For their final exam, the seven participants were tasked with creating a unique dish from scratch, resulting in the stunning plates pictured here.

Many graduates of the Culinary Training Program have moved onto higher positions within the department, and some even to Assistant Cook! Congratulations to this group of amazingly talented individuals!

The Culinary Training Program is one of many special programs that were developed with H&HS’s unique culture of caring in mind. The driving force behind the organization’s mission, which is to provide exceptional guest and student experiences, also lends itself to a work environment that cultivates team member engagement and growth.

At H&HS there is a long history of implementing and sustaining programs that help staff grow both professionally and personally. The long-standing Mentoring Program, Project SPELL, and newly rolled out Diabetes Prevention Program are highly visible efforts to show the team that the organization cares for them and will provide resources to assist them as individuals to reach their fullest potential.
